The Norwegian Kransekake Known as the Norwegian wedding cake, Kransekake (Crahnse cahkeh), or “wreath cake,” takes the form of a series of concentric rings of cake, layered on top of each other to form a steep-sloped pyramid. The ideal kransekake is made with almonds, sugar, egg whites, flour, the texture is hard to the touch, yet chewy, and served from the bottom ring working your way to the top. This festive cake can be decorated with toothpick flags, candies, or small party favors like Christmas noise makers, flowers, or ribbons, and has been made by all Scandinavian countries to be enjoyed at every celebration (i.e. Christmas, New Year's Eve, Syttende Mai, weddings, birthdays, christenings, housewarmings, etc.).
